Wynkoop's Famous Cheesy Artichoke Dip

Between celebrating the end of 2009 and the run up to Super Bowl in early February, January is packed with the kind of events that just cry out, “pass the dip.” And what better dip to serve than Wynkoop’s Famous Cheesy Artichoke Dip. Whoever wins or loses in the playoffs, this dip is a winner. If you want a smoother dip, mix the ingredients in a food processor; otherwise mix it by hand. The Wynkoop Brewing Company is located at 1634 18th Street. The recipe appears in Recipe, Please the cookbook.

WYNKOOP’S FAMOUS CHEESY ARTICHOKE DIP
Serves 8 to 10
˝ bunch green onions
1 (14-ounce) can artichoke hearts, drained and chopped
1 clove garlic, minced
Pinch of ground white pepper
˝ teaspoon celery salt
1 cup sour cream
1 cup mayonnaise
1/3 cup Parmesan cheese

Mince white and green part of green onions. Combine all ingredients and mix well with a whisk until thoroughly combined. Heat in a 375-degree oven until mixture is hot to the touch, about 30 minutes. As an alternate cooking method, heat in the microwave on high for 3 to 4 minutes; stopping at 30 second intervals to stir.
