Vesta continues to be a top spot in Denver. As one of the most innovative and popular restaurants, it has it all. The architecture includes curves of copper, exposed brick and cloth-shrouded light fixtures, but the amazing food and impeccable service are what keep people coming back again and again to this popular LoDo dining spot. Owners Josh and Jen Wolkon and Matt Selby (top toque) are incredible folks. Enjoy people-watch¬ing at the bar that stretches most of the length of the restaurant, or grab a seat on the patio to watch the crowds outside. Start the night with a glass of homemade sangria or sample a wine from the creative and unique wine list. For the first time they have totally redone the menu with everything on one page. It looks great and offers super dishes in each category. Over 30 sauces are available to accompany your entrée, ranging from sweet to savory, and hot to Vesta-hot. Use the chef’s choice on the menu or choose your own. Bites include spicy curry shrimp, pork belly, potato tots, and your choice of cheese and cured meats. The Vesta roll, ponzu shrimp, lamb ribs, samsas, and Saigon beef skewers bring fun beginnings. The main courses are amazing. Venison, salmon, lemongrass tuna, and grilled shrimp noodle bowl start the list. Jalapeno pork tenderloin, spice grilled lamb loin, bbq chicken, and and flat iron steak show the creativity of the chefs as each accompaniment adds to the terrific flavor and taste of each dish. The dessert list is decadent: dark-chocolate boca negra, daily bread pudding, orMatty’s Wacky Apple. The “candy bar” is a must, and the ice cream sandwich is awesome. Be sure to ask about their special menus for those with food allergies. The Vesta staff is among the best in town. Vesta is possibly the most upbeat scene in town with great energy in every aspect.
