Prime Rib

Ingredients:

1 prime rib
Salt and pepper or Elway's steak seasoning

Preparation:

Preheat oven to 400 degrees

Season the prime rib very well by rubbing it with either the seasoning or salt and pepper.

Place Prime Rib in Oven and roast for 15 minutes at 400. Then turn oven down to 250 degrees.

Slow roast for 4 to 5 hours (depending on the size of your roast) or until you reach an internal temperature of 120 degrees (for medium rare final temp will be 130) or to desired doneness.

Rest the roast for at least 10 minutes out of the oven.

The roast will carry over about 10 degrees after you take it out of the oven.

Once rested, to hold roast; place it in a warm oven at 130 degrees.

This will hold the temperature of the roast until time to serve. In the restaurant, we have very precise holding boxes that keep the roast at the exact temperature. At home, you might have less risk in holding it in a warm oven and enjoying within the hour.
