Trillium brings a twist with Scandanavian influenced fare!

Trillium debuts in Denver in the fast growing LoDo area near Coors Field and brings great dining to the area. The space is beautiful—very modern with exposed ceilings, one brick wall, huge windows, and a great focal bar of black and white tile. A semi open kitchen finishes the room where lovely wood tables and chairs are spaced for comfortable dining. With a lovely background, Chef/Owner Ryan Leinonen brings a very creative menu with touches of Sweden to the food. Start with the best rolls, a recipe of his mom—and nobody beats mom’s cooking, and add a selection of smorgasbord. Choose Aquavit cured salmon, ham mousse, pickled shrimp, and maple cured trout. Add truffled tator tots, Portobello fries, cauliflower soup, and oysters, but don’t stop until you add cheese, or splurge on caviar. All are great. Smaller plates include a winter salad, apple, potato and beet salad, foie gras mousse, trout raaka, fried smelts, and brioche topped with poached shrimp and more. Bigger plates shine in taste and presentation: steelhead trout over a rich mussel dill cream broth, duck breast, open ravioli of grilled prams in mushroom bisque, chicken breast with divine Brussels sprouts, egg noodles and bacon mustard vinaigrette. Arch char and Lake Superior whitefish round out the very interesting and enticing menu. Leave room for desserts that range from carrot cake and fried apple strudel to lemon buttermilk pudding cake, panna cotta, and warm chocolate fallen cake. All are totally decadent and worth the indulgence. The wine list is excellent and the service shines with a fabulous staff to complement the food. Ryan and staff bring a great new choice for dining in Denver.
